Mandy Yin’s restaurant Sambal Shiok once turned a healthy profit on Holloway Road. Now, despite laksa priced at £22 — up from £13.80 in 2020 — it has posted a £45k loss. Staffing can account for 55% of a dish; the average meal out is £24.45 per person, and weekly dining has fallen from 49% in 2019 to 38%. Are independents being priced out for good?
